Pazo Torrado is made by Terra de Asorei, a group of 8 top Galician growers who between them have 70 hectares of prime Albariño vineyards.
The fruit for this wine (100% Albariño) comes from 15 year old vines grown at an altitude of 100 metres in the Salnés Valley of Rias Baixas an area that benefits from the moderating influence of the nearby Atlantic Ocean. Temperatures are cool and the rainfall moderate.
After picking, the grapes are crushed and gently pressed in a pneumatic press. The must is then allowed to settle for 24 hours before fermentation in temperature controlled stainless steel vats. The young wine is cold stabilised for a week prior to filtering and bottling.
Pale lemon yellow with hints of green, the nose is full of fresh apple aromas with notes of citrus and white flowers. The palate is dry with fresh, lively acidity underneath the gentle fruit flavours. The finish is long and persistent with excellent minerality.
Martín Códax is the largest producer in Galicia with 450 hectares of vineyard planted to Albariño, which represents 13% of the total Rías Baixas DO.
The co-operative was founded in 1986 by a group of winemakers led by ninth generation winemaker Luciano Amoedo and currently comprises 2,400 tiny vineyard parcels individually managed by 550 families. Martín Códax was instrumental in the creation of the Rías Baixas DO in 1988 (in fact the statutes were signed at the winery) and are estate-grown Albariño specialists, conducting ongoing research into the variety.
The vineyards are primarily in the Salnés Valley, an average of five kilometres from the sea, ensuring the warm days are moderated by cool nights. The warm temperatures give ripeness and full citrus and apricot fruit, while the colder temperatures at night ensure fresh, pure Albariño aromatics.
The wine was fermented in temperature controlled stainless steel vats and underwent full malolactic fermentation. It spent four months on its fine lees which gave a smooth, almost creamy texture to the wine.
Bright, straw-yellow in colour. Intensely perfumed, with hints of fresh herbs, green apples, citrus fruit and grapefruit. It is long, rounded and full-bodied on the palate, with a light petillance that gives the wine a vivacious, fresh finish.
The Albariño Organistrum is made with grapes that come from a selected plot that faces the south west and is located at 110m above sea level. The grapes from this vineyard usually ripen sooner than the rest of their plots. The grapes are chosen in order to make a wine that will improve after ageing in barriques.
Fermentation starts in temperature-controlled stainless steel vats before finishing in French oak barrels from Allier, where the malolactic fermentation takes place for three months. When this process is finished, Organistrum rests in stainless steel vats again for approximately seven months before bottling.
Clean, attractive straw-yellow colour with a bright lemon glint. A delicate vanilla touch mingles with light perfumes of smoky wood and notes of lemon, grapefruit and white stone fruit. Dry, well balanced and full-bodied, its persistence and complexity makes Organistrum harmoniously rounded, ending with a long finish.
